They should be available on trains and in stations on the respective routes, but in case you wish to start plotting your trip in advance, here are links to Amtrak route guides (.pdf format) for the 4 long distance trains we will be riding together:

The Sunset Limited and Southwest Chief don't appear to have their own menus, so they fall under All Other Dining Cars.
